(0:00) The journey to your salad starts out here in the field. We have tried growing the lettuce in the greenhouse too but it doesn't like it as much. It's healthier out here.
This variety is so cool because you can cut it and it'll grow back and we'll get another cutting.
(0:19) Welcome to the wash and pack. So we've got your greens and we dump it into the tub and get them bubbling. That gets any bugs or specks of dirt off and then we can scoop them.

(0:50) And it's the fun part next.

(0:56) Sierra likes the salad thinner.

(0:00) Okay, now for Sierra’s favorite part.
So we'll spin it to get it really dry so that it stays fresh longer for you and then next step we'll pack it.
(0:30) All right, I'm going to wash my hands so we can bag it up.
All right, the salad greens are washed and dried. We'll tare out the weight of the bag and get five ounces in each bag.
All right, test my work, a little bit more, a little bit more, perfect.
All right, this is where the real skill comes in. Get the right amount of air so the leaves aren't crushed but not too much air. It doesn't need to be like a gold fish.
Too much air, they don't fit in the totes. All right, that's it.
