Zesty Beet & Shaved Fennel Salad

This one comes from Tasha, inspired by a salad she loved while on break from performing music at the Pines. It’s that memorable!

It’s pictured here with grilled salmon topped with fennel frond pesto. My own little bistro dinner.

Ingredients:

• Old Dog Farm salad greens, lettuce, or massaged kale

• Old Dog Farm beets (roasted & sliced)

• Old Dog Farm fennel (sliced thin)

• Old Dog Farm onion (sliced thin)

• Orange or mandarin segments

• Feta cheese

Zesty Dressing:

• ¼ cup olive oil

• Juice of 1 lemon

• 1.5 teaspoons honey

• Salt & pepper

Tip: Save your fennel fronds and sprinkle then over the top like a fresh herb.
