Tasha’s Zesty Beet & Shaved Fennel Salad

The licorice note of the fennel against the earthy beet and bright lemon is like dining at Trio in your own kitchen.

Ingredients:

• Old Dog Farm salad greens

• Old Dog Farm beets (roasted & sliced)

• Old Dog Farm fennel (sliced thin)

• Old Dog Farm red onion (sliced thin)

• Orange or mandarin segments

• Feta cheese

Zesty Dressing:

• ¼ cup olive oil

• Juice of 1 lemon

• 1.5 teaspoons honey

• Salt & pepper

Tip: Save your fennel fronds, chop them up, and sprinkle then over the top like a fresh herb.
