Deconstructed Waldorf Salad

This deconstructed version celebrates the crunch of baby salad greens with a light, bright twist. Perfect for early summer!

Ingredients:

  • Old Dog Farm baby salad greens

  • Old Dog Farm chives (chopped)

  • Celery (thinly sliced)

  • Grapes

  • Pecorino (cut into small cubes)

  • Shredded chicken

  • Toasted walnuts or pinenuts

Homemade Mayo Ingredients:

  • 1 Old Dog Farm egg (chicken or duck)

  • 1 small clove Old Dog Farm garlic

  • Juice from ½ lemon

  • 1 teaspoon stoneground mustard

  • 1 teaspoon apple cider vinegar

  • ½ teaspoon salt

  • 1 ½ cups avocado oil

Creamy Dressing:

  • ¼ cup homemade mayo

  • ¼ cup Greek yogurt

  • Juice from ½ lemon

  • Salt & pepper

Tip: Combine all of the mayo ingredients except the oil in a food processor, blender, or jar for an immersion blender. With the blade running, add the oil in a slow drizzle. This will be the best tasting mayo you’ve ever had!
