Katlin’s Early Summer Salad
This is a celebration of the first berries, the joy blast of salads—vibrant and perfect for a Saturday lunch on the porch. The secret is adding just a tiny bit of fresh mint to the dressing. It makes the strawberries pop and smells like summer.
Ingredients:
Old Dog Farm spinach
Old Dog Farm carrots (grated)
Sprouts
Strawberries (sliced)
Goat cheese
Walnuts
Bright Vinaigrette:
2-3 Old Dog mint leaves (minced)
3 tablespoons olive oil
1½ tablespoons white wine vinegar
1 teaspoon honey
Pinch of salt
Tip: Wait until the last second to add the sprouts. They provide the crunch that makes the whole bowl feel alive.
